Holy Guacamole

After choosing to make tacos for dinner we decided homemade guacamole would be a perfect accompaniment to the tacos with some tortilla chips. We found a highly rated recipe on Allrecipes.com that was also quick and easy. The guacamole turned out so well we ended up putting it on top of our tacos. It added a fantastic freshness and was really the "icing on the cake."


Ingredients
3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma tomatoes, diced
1 teaspoon minced garlic

Directions
In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Refrigerate for 1 hour for best flavor, or serve right away.

Ground Turkey Tacos

We were feeling like tacos, and were going to make fish or shrimp. But, we had some turkey on hand, and the closest grocery store doesn't have the best fish counter...so ground turkey tacos was an simple decision. These tacos are delicious and take no time at all to make. You can substitute ground beef if you want, but we chose turkey because it's lighter and healthier, plus we already had some around.

Recipe:
  • 1 lb. ground turkey (beef)
  • 1 packet taco seasoning
  • toppings (shredded cheese, onions, lettuce, tomato, sour cream, chilies, jalapeƱos, guacamole, really whatever you want)
Note: we definitely recommend using our guacamole recipe with the tacos!!

  • Heat the turkey in a sauce pan until browned and drain
  • Stir in the taco seasoning and the required amount of water (back of packet)
