Tomato Bruschetta

We decided to remake the pesto pasta and needed a side dish. The idea of homemade bruschetta made our mouths water. We combined the following simple ingredients and the result was even better than we imagined. 

Ingredients
Loaf of French Bread (we just bought the fresh baked French bread at Fry's)
About 1 Roma tomato for every 3 pieces of French bread
Olive oil
Ground Pepper
Garlic Salt


Put slice of bread on a baking sheet. Pour and then spread a little bit of olive oil on top of each piece of bread. Toast the bread in the oven at 350 degrees for about 5-10 minutes. Make sure to keep an eye on the bread and take them out when they are toasted to your liking.


While the bread is toasting, chop the tomatoes.



Put the tomatoes into a small bowl and add olive oil, to taste.


Add the ground pepper and garlic salt, to taste.


Mix ingredients. This would be a good time to taste to see if you want to add any more seasonings.


Once the bread has been taken out of the oven, spoon the tomato mixture onto the bread and enjoy!

Iced Oatmeal Chocolate Chip Cookies


After wanting to try a new recipe, we stumbled on this iced oatmeal cookie recipe. We decided to change it up a bit and add chocolate chips. The cookies turned out to be delicious and were a hit with our brothers.


Cookie Ingredients
1 cup of butter
2 cups of sugar
2 eggs
1 1/2 tablespoons honey
2 teaspoons vanilla
2 cups flour
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups quick oats
a bag of chocolate chips (optional)

Icing Ingredients
2 cups powdered sugar
4 tablespoons milk


Cream together the butter and sugar.


Add the eggs, 


the honey,


and the vanilla.


In a separate bowl, combine the flour, baking soda, cinnamon and salt. 


Gradually add the dry ingredients to the mixture.


Stir in the oats.


Stir in the chocolate chips. Use whatever amount looks best to you. We always believe lots of chocolate is the best.


Drop by the tablespoons onto a cookie sheet. Bake at 350 degrees for about 6 minutes.


While the cookies are baking, mix together the powdered sugar and milk until smooth.


A minute or two after taking the cookies out of the oven, ice with the glaze.

Mexican Wedding Cookies

Michael and I have been talking about making Mexican Wedding Cookies for a really long time. I finally made some for Michael a few weeks ago, using this recipe, and he loved them. I made them again today for Michael and our brothers. The recipe is fairly simple with few ingredients needed.


Ingredients
1 cup butter, softened
1 cup powdered sugar
1 tsp. vanilla
2 cups flour
1 cup pecan pieces


Beat the butter, 1/2 cup of powdered sugar and vanilla in a large bowl.



Use a blender or food processor to finely chop the pecan pieces.


Pour half the flour into the batter and mix.


Pour the pecans into the batter and continue mixing.


Pour the remainder of the flour into the batter and mix well.



Shape dough into balls on a cookie sheet and bake at 350 degrees for about 14 minutes or until the bottom of the cookies are lightly browned.


Allow the cookies to cool for about 5 minutes, then roll each cookie in the remainder of the powdered sugar until they're evenly coated. 

Allow cookies to cool completely and enjoy!

Turkey Chili

Ingredients
1 tablespoon olive oil
1 cup chopped sweet onions
3 cloves minced garlic (personal preference)
1 chopped bell peppers
1.25 pound ground turkey
1 (28 oz) can crushed tomatoes (undrained)
1 (16 oz) can red kidney beans (drained and rinsed)


Sautee chopped onion and pepper in olive oil (vegetable oil works fine also). Add in minced garlic after a couple minutes so it does not burn.We used 3 cloves.

Brown turkey and add in sauteed veggies.
Add in the rest of the ingredients and bring to a simmer.
Let simmer for about an hour. Leave uncovered to allow some of the liquid to cook off. If it has reached desired consistency but you want to continue to cook/warm it, just put a lid on.
BTWs, goes great with corn bread!

Chocolate Chip Gingerbread Cupcakes

After our delicious mozzarella and tomato sandwiches we decided to try a new treat. We bought gingerbread cake at Trader Joe's and thought we'd make our own creation. These cupcakes are filled with gingerbread and chocolate and topped with a sweet glaze. Try them out for yourself!


Ingredients
Trader Joe's Gingerbread Cake & Baking Mix
1 egg
1/3 cup vegetable oil
3/4 cup water
chocolate chips

Glaze
1/2 cup powdered sugar
1 tablespoon water



Combine the gingerbread mix, water, egg, and vegetable oil.


Mix well and add as many chocolate chips as you like.


Pour batter into cupcake tins. Bake at 350 degrees for about 15 minutes, or until an inserted toothpick comes out clean.


Once the cupcakes have cooled you can start the glaze.


Combine the sugar and water and mix well.


If the glaze is too liquid, continue adding more powdered sugar until the desired consistency.


Drizzle the the glaze on the cupcake and enjoy!
