Turkey Rollups


With Passover quickly approaching, I knew I needed to think of some good snack/meal ideas that excluded matzah. I had heard this idea before on a health food blog and thought I'd give them a try. They're pretty good for how easy they are to make. 


All you need is some sliced turkey, sliced cheese (I used American), a pickle, and mustard.


I decided to use honey mustard. If you like honey mustard I'd recommend using it!


Lay out a slice of turkey and a slice of cheese and pour or spread the mustard.


Next add the pickle. I used a half of a pickle, but next time will cut the pickle into quarters because the flavor pickle overpowered the rollup.



Roll it all up and enjoy!

Belgian Waffles

I am very very excited to announce that I recently got a waffle maker as a gift from my parents. Seriously, this thing is amazing. If you like waffles (and who doesn't?) then this is a great appliance. We topped our waffles with speculoos, but of course any topping will do. 

This is speculoos (Biscoff brand). It has the consistency of peanut butter but is cinnamon-sugar-graham cracker flavored. I recently learned about this when I was in New York with some friends who took me to the Waffles and Dinges food cart. It is amazing and if you have never had it, it's time to start. Speculoos can be a little hard to find depending where you are, but its easy enough to order online.


We used 2 C Bisquick
1 large egg
1 C water

(In the future we plan on trying some homemade batters so look out for future waffle posts!)

Mix it all up and flatten out all the clumps. 



When you pour it in the press, it's important to spread it out with a spatula. Otherwise you might get some weird-shaped waffles which might not cook evenly.
