After a while away from the kitchen, I wanted to make something I had never before made from scratch. I found a recipe for sugar cookies. I made a few little modifications and the cookies turned out great! They remind me of the sugar cookies at Paradise Bakery.
Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup of butter (needs to be softened to avoid hard cookies)
1 1/2 cups white sugar
1 egg
1 1/4 teaspoon vanilla extract
Mix the dry ingredients (flour, baking powder and baking soda) in a small bowl and set aside.
In a medium/large bowl, add the butter. As previously mentioned the butter must be softened. You can use the microwave to speed up the process.
Add the sugar and mix well.
Add the egg and stir.
Add the vanilla and stir.
Gradually blend the dry ingredients into the mixture. Once well mixed, place the dough on a cookie sheet in balls a little larger than teaspoonful sized.
Take a cup (I used a measuring cup but you can use anything with a level bottom) and pour water on the bottom before dipping it into sugar.
Use the sugared bottom to stamp down on the cookie about halfway. Bake in the oven at 375 degrees. We like our cookies very soft so I took them out after 7 minutes. However, you can bake them anywhere between 7 and 10 minutes depending on your preference.
After taking them out of the oven let them cool off of the baking sheet (either on foil or a baking rack) and enjoy!
