Mini Peanut Butter and Jelly Pies

Michael found this recipe while stumbling (stumbleupon.com) on a blog called Picky Palate. The original recipe post can be found here. We love peanut butter and jelly and thought these looked delicious, so we decided to try the recipe out. They're pretty good, but try to avoid eating too many in one sitting..



Ingredients
1 roll Pillsbury pie dough
1/2 Cup creamy peanut butter
1 Tablespoon sugar
1/2 Cup Strawberry Preserves
1 egg white whisked with 1 teaspoon water for egg wash
2 Tablespoons powdered sugar
Instructions
1. Preheat oven to 350 degrees F. Unroll pie crust onto a lightly floured surface. Use a 2 1/2 inch round cutter to cut out circles in dough. Lightly press dough rounds into greased mini muffin tin. Roll remaining scraps of dough to an even thickness then use a sharp knife to cut thin 1/8 inch strips to create the lattice topping. Set aside.
2. Mix peanut butter and sugar until combined. Drop a heaping teaspoon into each of the pie crusts. Do the same with the jam. Using the pie strips, form the lattice top. Cut excess dough from edges and brush tops lightly with the egg wash and bake for 25-30 minutes or until golden brown.
3. Remove and with the tip of a knife, loosen edges where jam has oozed out. Carefully remove from pan after 5 minutes with the help of the knife and let cool. Dust with powdered sugar and serve!

Tuna Casserole



This is a tuna casserole recipe we originally got from Michael's mom. We love it so much, it is our most frequented recipe.


Ingredients

1 1/2 cup elbow macaroni (although we like to try different kinds of noodles to mix it up)
1 cup extra sharp grated cheddar (we like to add some extra)
1/4 cup mayo
1/2 cup milk
1 can solid white tuna (drained)
1/2 cup breadcrumbs
About a tablespoon of butter (the more the better, as Julia Child would say)
Casserole dish (preferably an 8" square pan)

Directions

Preheat oven to 400 degrees
Cook, drain and cool the noodles
Mix with the cheese, mayo, milk, and tuna in a casserole dish
Mix the breadcrumbs with the melted butter and then spread on top of the noodle mixture
Bake for 20 minutes and then it's ready to it!

Heavenly Chocolate Mousse

We found this yummy recipe on AllRecipes.com. Keep in mind it has to set for 4 hours or better, overnight.

Ingredients

  • 8 (1 ounce) squares semisweet chocolate, coarsely chopped
  • 1/2 cup water, divided
  • 2 tablespoons butter (no substitutes)
  • 3 egg yolks
  • 2 tablespoons sugar
  • 1 1/4 cups whipping cream, whipped

Directions

  1. In a microwave or double boiler, heat chocolate, 1/4 cup water and butter until the chocolate and butter are melted. Cool for 10 minutes. In a small heavy saucepan, whisk egg yolks, sugar and remaining water. Cook and stir over low heat until mixture reaches 160 degrees F, about 1-2 minutes. Remove from the heat; whisk in chocolate mixture. Set saucepan in ice and stir until cooled, about 5-10 minutes. Fold in whipped cream. Spoon into dessert dishes. Refrigerate for 4 hours or overnight.

Noodle Kugel


After eating the noodle kugel Michael's dad had made for our break-the-fast feast, we had been itching to try his recipe on our own. The flavor of the crushed pineapple combined with preserves was divine. We decided to wait for an opportunity to bring the dish to a family or friend get-together, so we would not end up eating the whole platter on our own. We finally got a chance, about four months later at a celebration for Neta accepting a job offer in California after graduation. The kugel, surprisingly, turned out as wonderful as when Michael’s dad made it.





Noodle Kugel
Ingredients
16 oz. package noodles-wide
1 ¼ stick margarine
1 cup milk (divided)
1 large can crushed pineapple (drained)
4 eggs
½ cup sugar
Cinnamon (optional, 1 tsp)
Any preserves (apricot, plum or raspberry) - we used both apricot and raspberry

Directions
Cook and drain noodles. Mix with ¾ stick margarine
Add pineapple and “1/2 cup milk”, sugar, eggs, cinnamon. Mix gently.
Pour into pan with ¼ stick melted margarine
Top with preserves – Dot with ¼ stick margarine. Pour ¼ cup milk over top – After ½ hour pour remaining ¼ cup milk on top
Bake 325 degrees for 1 hour in a large pan
