Cilantro Avocado salad dressing


Michael and I both really like to sometimes eat a big salad for dinner. However, we've become a bit bored with our default salad dressing of olive oil and balsamic vinegar. I found this recipe for a dressing that sounded too good to pass up. It was super easy to make and was so delicious! We couldn't believe how healthy it was, while still being creamy and delicious.

Ingredients
1 cup loosely packed cilantro (remove stems and roughly chop)
1/2 avocado
2 tablespoons fresh lime juice
1-2 garlic cloves
1 1/2 teaspoons white wine vinegar
1/8 teaspoon salt

Puree all ingredients in a food processor or blender until smooth. Taste and adjust, if necessary.

Homemade Peanut Butter



I've been so excited to make homemade peanut butter. About a year ago, Michael and I started eating natural ground peanut butter from Whole Foods and other healthy grocery stores (thanks R2!) Peanut butter (among pretty much everything else) is ridiculously expensive here in the city. We decided (since we eat so much peanut butter) it would be worth buying peanuts in bulk on Amazon and make our own. The result - delicious and super easy!!



All you have to do is throw some peanuts in a food processor and process until the butter is the consistency you desire. I made it creamy this time around so I waited until the butter clumped up in a ball before turning off the processor.

A few other quick ideas - 
  • add some honey
  • make it crunchy (process less)
  • add some cinnamon
  • add ground hot pepper for some spice

Belgian Waffles

I am very very excited to announce that I recently got a waffle maker as a gift from my parents. Seriously, this thing is amazing. If you like waffles (and who doesn't?) then this is a great appliance. We topped our waffles with speculoos, but of course any topping will do. 

This is speculoos (Biscoff brand). It has the consistency of peanut butter but is cinnamon-sugar-graham cracker flavored. I recently learned about this when I was in New York with some friends who took me to the Waffles and Dinges food cart. It is amazing and if you have never had it, it's time to start. Speculoos can be a little hard to find depending where you are, but its easy enough to order online.


We used 2 C Bisquick
1 large egg
1 C water

(In the future we plan on trying some homemade batters so look out for future waffle posts!)

Mix it all up and flatten out all the clumps. 



When you pour it in the press, it's important to spread it out with a spatula. Otherwise you might get some weird-shaped waffles which might not cook evenly.

Lemon Herb Dipping Sauce

We made crab cakes for dinner the other night, but this time we wanted to make our own sauce. After scouring for recipes, Michael's mom gave us her Lemon Herb Dipping Sauce recipe. This sauce paired perfectly with the crab cakes. 



Ingredients
1/2 Cup Mayo
21/2 Tablespoons lemon juice
1 Tablespoon parsley
1 Tablespoon fresh thyme
1 scallion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper


In a small bowl, add the Mayo.



Squeeze lemons for 2 1/2 Tablespoons of lemon juice


Add the lemon juice,


the parsley,


the thyme,


the chopped Scallion,


and the salt and pepper.


Thoroughly mix ingredients and the sauce is ready to top your favorite fish dish!
