Mexican Influenced Salad

We got this recipe from a family friend of Michael (thanks Harriet!)



Ingredients
1/3 cup lemon juice
1/3 cup Extra Virgin Olive Oil (although, next time we'll use a little bit more olive oil because the lemon was a bit too strong)
3-4 cloves of garlic (pressed)
salt and pepper to taste

Directions
Put all ingredients in a bottle (we just used a water bottle) and shake until well mixed. Ready to serve!
We put cilantro, quinoa, tomatoes, black olives and an avocado in our salad - it was a great combination.

Sloppy Toms

After a long day filled with school and studying, we both decided we need a little break so we decided to cook dinner. We bought a Sloppy Joe seasoning package, a while back, and decided to put it to good use tonight. It had a straightforward recipe on the back of the package. All we needed was the seasoning, ground turkey, a 6 oz can of tomato paste, and hamburger buns. If you're feeling adventurous, you can also try the Sloppy Toms on an English Muffin (preferably a thicker English muffin like Oroweat.) These sandwiches are quick and easy and may bring back some childhood memories :)

Pasta with Tomato Sauce and Turkey Sausage

Unfortunately, our current schedules make it very difficult to cook dinner together. However, tonight we were able to squeeze in an hour or so for a nice, home-cooked meal. We decided some pasta with turkey sausage would make for a tasty and easy dinner. While we boiled water and cooked the noodles, we sautéed some onions and garlic. Then, we added the sausage to the sauté, until it was nice and brown. Finally, we added some tomato and basil sauce and let it simmer. It was very simple dinner that really hit the spot.

Chocolate Chip Banana Bread

Since we hadn't baked in a while, we wanted to spend a relaxing night making something to eat. Michael had two brown bananas sitting around so we thought it'd be a perfect time to make chocolate chip banana bread. We found a recipe that called for two bananas and was pretty straightforward. The bread turned out well, but, as with most breads, we had a tough time cooking it through without burning the edges. The chunks of chocolate really made this bread a scrumptious snack.

Ingredients:
1/2 cup of melted butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
2 medium bananas, sliced
chocolate chips (amount depends on your love of chocolate)

Directions
Preheat the oven to 350 degrees F. Grease a loaf pan (9x5 inch)
In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt. Stir into the butter mixture until smooth. Finally, fold in the sour cream, bananas, and chocolate chips. Spread evenly into the prepared pan.
Bake for 60 minutes, or until a toothpick, inserted into the center of the loaf, comes out clean. Cool loaf in pan for 10 minutes before removing to a wire rack to cool completely.
