Chicken Rollatini


Ingredients:
chicken breasts (pounded)
stuffing: feta & cooked spinach (really can stuff with whatever you feel like)
topping: balsamic vinegar, olive oil, garlic powder, chili powder, breadcrumbs 


Pound the chicken. The thinner the better, and keep it even throughout.


Place the stuffing in the middle of the chicken. Fill as much as possible (you can fit more than you think). 


Roll up the chicken and pin it with toothpicks. We found that one or two through the center and another one or two on each end to close up the roll held them together perfectly.



Brush the rolls with the sauce. Mix about an 1/8 cup balsamic vinegar with a tbsp of olive oil. Add the garlic powder and chili powder to taste. A sprinkle of breadcrumbs are a nice touch also, if you are in the mood.


Bake for 20-40 minutes (time varies depending on how much chicken you are cooking).
