Chicken & Mozzarella on Ciabatta

Our favorite dish at one of our favorite restaurants is a chicken & mozarella panini with sun-dried tomato aioli.  We've been wanting to recreate this magnificent dish and finally got the opportunity. This sandwich is super easy to make and the ingredients can easily be modified to your liking.


Sauce Ingredients
1/4 cup of drained sun-dried tomatoes
1 small garlic clove, smashed
pinch or two of cayenne pepper
1/2 cup mayonnaise


Add the garlic, cayenne pepper and tomatoes in a food processor or blender and pulse until finely chopped and then puree.


Add the mayo and continue and pulse until blended.



Slice the bread and lightly toast



Put the sandwiches together. Note - turkey slices can be used instead of chicken. Also, if you are a vegetarian the sauce and mozzarella are great on their own.
