Mexican Influenced Salad

We got this recipe from a family friend of Michael (thanks Harriet!)



Ingredients
1/3 cup lemon juice
1/3 cup Extra Virgin Olive Oil (although, next time we'll use a little bit more olive oil because the lemon was a bit too strong)
3-4 cloves of garlic (pressed)
salt and pepper to taste

Directions
Put all ingredients in a bottle (we just used a water bottle) and shake until well mixed. Ready to serve!
We put cilantro, quinoa, tomatoes, black olives and an avocado in our salad - it was a great combination.
