Since we hadn't baked in a while, we wanted to spend a relaxing night making something to eat. Michael had two brown bananas sitting around so we thought it'd be a perfect time to make chocolate chip banana bread. We found a recipe that called for two bananas and was pretty straightforward. The bread turned out well, but, as with most breads, we had a tough time cooking it through without burning the edges. The chunks of chocolate really made this bread a scrumptious snack.
Ingredients:
1/2 cup of melted butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
2 medium bananas, sliced
chocolate chips (amount depends on your love of chocolate)
Directions
Preheat the oven to 350 degrees F. Grease a loaf pan (9x5 inch)
In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt. Stir into the butter mixture until smooth. Finally, fold in the sour cream, bananas, and chocolate chips. Spread evenly into the prepared pan.
Bake for 60 minutes, or until a toothpick, inserted into the center of the loaf, comes out clean. Cool loaf in pan for 10 minutes before removing to a wire rack to cool completely.
