Burrito Bowl For 2
Ingredients:
- 1 cup brown rice
- 1 3/4 cups water
- 1/4 cup lime juice (lemon works too)
- 1/3-1/2 cup cilantro
- 2 chicken breasts
- 1 hot pepper
- 1 tomato
- 1 avocado
- sour cream and shredded cheese (optional)
- Cook the rice in the water, lemon juice, and cilantro.
- Cube the chicken and sear on a skillet with either a Mexican or all purpose seasoning.
- Chop the vegetables.
- Mix it all up and add the sour cream and cheese on top.
