Chocolate Chip Gingerbread Cupcakes

After our delicious mozzarella and tomato sandwiches we decided to try a new treat. We bought gingerbread cake at Trader Joe's and thought we'd make our own creation. These cupcakes are filled with gingerbread and chocolate and topped with a sweet glaze. Try them out for yourself!


Ingredients
Trader Joe's Gingerbread Cake & Baking Mix
1 egg
1/3 cup vegetable oil
3/4 cup water
chocolate chips

Glaze
1/2 cup powdered sugar
1 tablespoon water



Combine the gingerbread mix, water, egg, and vegetable oil.


Mix well and add as many chocolate chips as you like.


Pour batter into cupcake tins. Bake at 350 degrees for about 15 minutes, or until an inserted toothpick comes out clean.


Once the cupcakes have cooled you can start the glaze.


Combine the sugar and water and mix well.


If the glaze is too liquid, continue adding more powdered sugar until the desired consistency.


Drizzle the the glaze on the cupcake and enjoy!
