Michael and I have been talking about making Mexican Wedding Cookies for a really long time. I finally made some for Michael a few weeks ago, using this recipe, and he loved them. I made them again today for Michael and our brothers. The recipe is fairly simple with few ingredients needed.
Ingredients
1 cup butter, softened
1 cup powdered sugar
1 tsp. vanilla
2 cups flour
1 cup pecan pieces
Beat the butter, 1/2 cup of powdered sugar and vanilla in a large bowl.
Use a blender or food processor to finely chop the pecan pieces.
Pour half the flour into the batter and mix.
Pour the pecans into the batter and continue mixing.
Pour the remainder of the flour into the batter and mix well.
Shape dough into balls on a cookie sheet and bake at 350 degrees for about 14 minutes or until the bottom of the cookies are lightly browned.
Allow the cookies to cool for about 5 minutes, then roll each cookie in the remainder of the powdered sugar until they're evenly coated.
Allow cookies to cool completely and enjoy!
